Hay Milk, as Unique as it is Precious
The common quality criterion of the Bregenzerwald cheese specialists is the exclusive use of hay milk. In this traditional form of milk production – hay farming – the cows are fed exclusively with hay and fresh grass. The flavor nuances of the various herbs and grasses make the milk particularly spicy and give it a strong aroma. This unique taste is also reflected in the spicy raw milk cheese.
